Chicken With Corn Meal

Dumplings


1 hen (cut up)
black pepper
2 medium onions (sliced)
1 teaspoon salt (you will need more later)
2 teaspoons baking powder
2 carrots (sliced)
2 cups yellow corn meal
2 eggs
2/3 cup milk
Put chicken in Dutch oven, including giblets. Add carrots, onions, salt, and pepper. Cover well with boiling water. Simmer for 1.5 hours until tender. Mix meal, salt, and baking powder. Beat eggs and milk together and add to meal mixture until dough is stiff. (Add more meal if needed) Remove chicken from broth but keep warm. Drop dough by spoonfuls into boiling broth. Cover lightly and simmer for 15 minutes. Serve chicken and corn meal dumplings together.
